morning glory muffins
these are another favourite i was introduced to in my amherst college days. i made them again just now and they turned out highly successful. i think "morning glory" is a pun on the colour/the absolute gloriousness: they're made with carrot, apple, raisins, nuts, and coconut. it tastes to me a lot like charoset in a delicious, moist cakey form. i think i've already eaten six of them (oops).
morning glory muffins
4,8 dL flour (2 cups)
3 dL white sugar (1 1/4 cups)
2 t baking soda
2 t cinnamon
dash of nutmeg
dash of cloves
1/4 t salt
2 Tablespoons vanilla sugar (2 t vanilla extract)
4,8 dL grated carrots (2 cups)
1 1/4 dL raisins (1/2 cup)
1 1/4 dL finely-chopped nuts (1/2 cup)
1 1/4 dL coconut flakes (1/2 cup)
1 apple: peeled, cored and shredded
3 eggs
2,4 dL oil (1 cup)
preheat oven to 175 C (350 F). mix the dry ingredients well. add carrots, raisins, nuts, coconut and apple and mix. in a separate bowl, beat the eggs and oil. fold into the carrot mixture just enough to moisten. bake 13-20 minutes, or until a toothpick inserted in the center comes out clean.
