EDIT: But my brother-in-law and his wife, who are rather ignorant of cooking (they didn't know how gravy or white sauce are made - ie about thickening - when it came up in conversation) and don't use recipes still put basil and oregano in with the tomato when they make "Italian" style dishes. Not perhaps always as much of it as called for, but they have it and they use it.
