I made a mass of cupcakes with my favourite chocolate cake recipe yesterday (only 37, then I ran out of cupcake papers and had to make a cake with the rest) and my whole plan was flung into DISASTER to discover I didn't have any confectioner's sugar! I looked around google for granulated sugar frosting recipes - to no avail. They all required cream of tartar or else boiling syrup or sugar to a candy consistency before beating it for a really long time with egg whites. It's not my kind of frosting. Fortunately there are a few stores open today. If the nearby gas station doesn't have it the K-market on Aningaisgatan probably will. What I really want is a rainbow of brilliant pastel frostings and different sprinkles, but I only have two food colourings and you can only buy that at pharmacies. But hopefully I can get some sprinkls.

Drive-by comment to say that my favorite recipe for frosting doesn't require any sugar at all—just chocolate chips, butter, coffee, and vanilla. It's more cake frosting than cupcake frosting, but if you want it I'll go find my Joy of Cooking and type it up for you! :)

I think vinegar can be used as a replacement for cream of tartar, you'd probably have to google the ratio in which to use it (assuming you had vinegar).

I saw a recipe forum where someone said they used lemon juice. Apparently it's the acid that does it.

Wouldn't cake and cupcake frosting be the same? I always think of them as small cakes. But I don't have any baking chocolate anyway, and I really want a light-coloured icing so I can colour it pink.

I didn't realize what cream of tartar was and thought I could omit it, then had a cheesecake fail to set. I ended up using a couple of packets of vinegar leftover from some restaurant as a substitute to fix it up.
