grilled chicken salad
19 Jul 2009 10:27 pmAbout a bowl of mixed salad, 2 tomatoes, 3 grilled chicken breasts in strips, a double handful of fresh basil leaves & green onions torn roughly into smaller pieces. Dressing: a few tablespoons of pesto mixed in a small bowl with oil (maybe a deciliter or abt ½ cup), a couple of teaspoons of lemon juice and a bit of water to thin it out.
Not exactly surprisingly, this is very very tasty. But I need to be sure and remember the proportions. Last time we had chicken salad, the lack of basil and use of balsamic vinegar instead of pesto and lemon made it much less delicious.
