i find it surprisingly good, therefore
1/2 lb penne, cooked, chilled
1/2 cup extra-virgin olive oil
3 Tbsp red wine vinegar, with a dash of balsamic
1 can quartered or diced artichoke hearts, drained
1 can diced italian-flavored tomatoes (i.e., basil, oregano), drained
1/4 jar green olives
1/4 fresh onion, finely chopped
grated parmesan
salt and pepper
a dash of dried oregano, finely crumbled
crush oregano into oil and vinegar; sprinkle salt and pepper in; mix briskly with a fork and pour over chilled pasta. put in all the vegetables. toss some more. sprinkle on the parmesan.
i can't abide powdered garlic and i'm out of fresh, or it'd be somewhat better.
