i posted about the slightly dry orange chocolate chip muffins i tried out a few weeks ago, and thanks to all your advice, i made them again last night with more success.
orange chocolate chip muffins
1 large unpeeled orange, cut into 1/8ths, then each piece into thirds
1,75 dL orange juice
1 egg
110 g softened butter
½ dL vegetable oil
1,8 dL white sugar
½ T vanilla sugar
3,3 dL flour
1 t baking powder
1 ½ t baking soda
200 grams dark or semi-sweet chocolate, cut into chunks, or chocolate chips
scrub and cut the orange, discard the seeds, and puree in food processor along with the juice. add egg, then oil, then butter. in a separate bowl, whisk dry ingredients, then add them to the wet mixture. add chocolate and mix gently but thoroughly. bake 15-20 min at 200 C, but watch carefully in the oven. cool 5 minutes before eating.
these next ones are honey-flavoured but not dessertishly sweet. nice with butter.
honey oatmeal muffins
4 dL flour
2 t baking powder
1/4 t baking soda
½ t cinnamon
2 dL oats
½ t salt
2 eggs, slightly beaten
0,8 dL honey
1,5 dL milk
0,6 dL oil
combine dry ingredients and mix well. beat egg, honey, milk and oil. pour wet mixture over dry ingredients and mix just until thoroughly moistened. bake 15-30 minutes at 190 C, until a wooden pick inserted in the center of a muffin comes out clean.
i made these a couple of weeks ago and we thought they were divine, but unusually unsweet. i toyed with the possibility of increasing the sugar in the recipe. the cookie dough is very stiff, and the cookies come out dense. because of this, they're ideally very small, so they're kind of a small and potent bomb. they're also tricky because you find yourself accidentally eating too many of them, and then feeling unpleasantly full. but maybe that's just me.
dense oatmeal raisin chocolate chip cookies
preheat oven to 190 C.
225 g butter
2,5 dL brown sugar
1 egg
1 T vanilla sugar
3,6 dL flour
1 t baking soda
1 t salt
3,75 dL oatmeal
1,9 dL raisins
1,9 dL chocolate chips or 200 grams chocolate chopped into chunks
optional: 1,9 dL finely-chopped nuts
cream butter and add sugar, vanilla sugar, and egg. combine flour, salt, and soda, and mix will, then add oatmeal and mix again. blend the wet and dry ingredients. fold in raisins, then chocolate, then nuts. each cookie should be a heaping teaspoon of batter. form them, with moistened fingers, and make them taller than they are wide on the baking tray so that they can spread a little. bake 8-9 minutes.
