quick food / texmex ponderings

I'm thinking Blå Band (?) Mexican rice mix1 PLUS a few tablespoons chili powder2 MINUS the meat3 PLUS some fresh tomatoes and greens, wrapped in a flour tortilla sealed with cheese... would make a pretty delicious faux-Tex-Mex meal that would be far tastier and more authentic-seeming than the food they serve at that Red Hot Chili Whatever restaurant in Hansa that used to be called Amarillo. The salsa on the side would be better too because at that restaurant they don't add lemon juice, oregano, fresh tomatoes, and chili powder to the bottled salsa.
Oh man. I cannot wait to visit America in October and have real Tex Mex. *___* And also Taco Bell. I don't claim that Taco Bell is real Tex Mex; I just like it. (We're going to the Kansas City region in early October of this year. No dates confirmed yet.)

Footnotes:
- that is to say, the Nordic idea of Mexican rice, which is to say, a sort of... soupy risotto with Mexican spices, except not actually hot and spicy
- which isn't quite the same but it's cheaper and easier than buying the chiles
- I only eat fish and poultry, and the price of chicken has gone up lately
