Kicked off the new year - after napping through the middle of the evening and waking just at midnight thanks to fucking hormone headache - with my new faaaaavorite dessert, cream cheese-frosted banana cupcakes!
Banana bread makes great cupcakes/muffins. By the loaf I like to spread butter on it, but actually it's even better with a simple cream cheese frosting
That's half a package of cream cheese - the standard size is similar from place to place - with a tablespoon or a little less of butter, just softened (not melted) in the microwave (defrost for 30 seconds a couple of times will do this); then I add a deciliter (½ cup, about) of powdered sugar and a few drops of lemon juice (if you've got it in bottled form - otherwise it's not worth it for such a small bit). Easy to blend with a fork. This amount will fit easily in an ordinary tupperware, and is about right to be used somewhat sparingly for a single recipe of banana bread. A whole cake would take twice that amount at least.
