orange cinnamon chicken breasts
2-4 boneless, skinless chicken breasts
2 T butter, or more
some cooking oil
1 large orange, peeled, sliced crosswise and segmented
2 T flour
salt
1 cube chicken bouillon
cinnamon (i use about 1 T)
2 dL orange juice
preheat the oven to 200 C.
heat the butter till melted in a deep skillet and brown the chicken in it - use the breasts whole or slice them into smaller pieces for ease of cooking and serving if you prefer. leave the skillet on, and add some cooking oil to the butter if necessary; you want there to be enough oil to spread around when you add the dry ingredients and liquid. turn the heat down to low. arrange the chicken pieces and orange segments in a small baking dish.
add the bouillon cube to the skillet and stir until it is dissolved. blend the flour, salt, and cinnamon together separately and then slowly and gradually add them to the oil in the skillet, stirring after each small addition to blend evenly. stir in the orange juice just as gradually, over several minutes. turn the heat up to medium and cook until the thickened sauce is about to boil. pour over the chicken and bake for 45 minutes.
serve with rice. sadly, it doesn't reheat particularly well - that is, it still tastes all right but there tends to be a shortage of sauce.
why do i have a headache? i don't approve of this. i'd even have been happy if it were a caffeine headache because at least then i could just feed myself caffeine, but it didn't go away, despite feeling vaguely caffeine-ish.
i've kind of not been noticing the passage of time, and did not realise it was getting towards the time when i'll have to bake a bunch of sugar cookies to take to wax's mom's with us - early the day after tomorrow, i presume. i hope this christmas doesn't mean wax is so tired from work she's sleeping half the time we're there again. which also means tomorrow's probably the last day to pick up stray christmas presents - five books for her mom were supposed to arrive at the local branch of the bookstore in time, but so far only three have. why does it say "1-2 business days" if what it means is "more than three business days", i wonder?
