Last night Wax made a mini peanut butter lemon cake to try out, because I didn't want to risk wasting all those ingredients on a big one in case the flavor combination didn't work, but it was DELICIOUS!

Now we're gonna make a peanut butter lemon layer cake by combining two recipes, but I tried googling and I couldn't find any other recipes or products combining these two flavors! Which seems bizarre!

My first reaction was suspicion when Wax suggested it, so maybe that's why. But it was fantastic.

I'll have to remember to try adding lemon extract or zest to a portion of the mixture when next I'm making peanut butter cookies. :)

It sounds odd to me too, but I guess it's the same principle as peanut butter and jelly -- you accompany the PB with something sweet that has a tart edge. Interesting!
